Grandma’s Creamy Spinach Casserole

This was a dish served by my grandmother at every holiday gathering. It was so good! She always had a way with making everyone feel welcomed, including filling the bellies of all that visited her home. Holidays were extra special and the scents coming from the kitchen... oh, my! So many turn their nose at spinach but we are telling you that this is one we've seen even those that have sworn off spinach coming back for more! Let us know what you think. This dish is low carb, gluten-free, grain-free, and soy-free.

Ingredients:
 16 oz carton whole milk cottage cheese, small curd preferred
 8 oz medium organic, raw cheddar cheese, grated
 16 oz frozen, chopped spinach, thawed, and drained
 3 eggs, beaten
 1 tsp hot sauce, can add more if you want to turn up the heat
 1 tsp red chili flakes (optional)
 1 tbsp minced garlic (you can adjust this amount to suit you)
 1 medium onion, finely chopped
 ½ tsp black pepper
 ½ tsp sea salt
 ¼ tsp nutmeg (optional)

Directions:

Preheat oven to 350 degrees Fahrenheit

Thaw and drain spinach. Be sure to really squeeze out all of the liquid.

Place all ingredients in a large mixing bowl and mix until well combined.

*Grease a 9 x 13 baking dish with coconut oil, grass-fed butter, or olive oil (whichever you prefer).

*note: you can also line your baking dish with parchment paper, instead of greasing, for easy clean up

Spoon spinach mixture into baking dish.

Bake in a 350 degree F preheated oven for 45 minutes

(times may vary depending on your altitude and oven so check after 30-35 minutes if this is your first time making this dish)

Allow to cool slightly, serve, and we hope you enjoy!
